This simple dinner recipe is a newcomer in the rotation and was a hit with both grown-ups and kids! It features two of my favorite brands - @ancientharvest and @doublebatcheese! π€©
@ancientharvest Gluten-Free Penne (made with corn, brown rice & quinoa) π
Broccoli π₯¦
Spinach π₯¬
Pumpkin seeds π
Avocado slices π₯
Pea shoots π±
For the Alfredo:
SautΓ© chopped garlic π§ with vegan butter π±π§ until the garlic is soft. Add vegan milk π±π₯, vegan Parmesan cheese π±π§ (I prefer @doublebatcheese - made from high quality ingredients!), vegan Mozzarella π±π§ (@doublebatcheese again!), a touch of Himalayan Pink Salt ποΈππ§, black pepper πΆοΈ π€, and an avocado, chopped π₯ and the juice of half a lemon π. Simmer and whisk until smooth.
