🌱RECIPE: Lemon Avocado Alfredo Penne🌱

This simple dinner recipe is a newcomer in the rotation and was a hit with both grown-ups and kids! It features two of my favorite brands - @ancientharvest and @doublebatcheese! 🀩

@ancientharvest Gluten-Free Penne (made with corn, brown rice & quinoa) 🍝
Broccoli πŸ₯¦
Spinach πŸ₯¬
Pumpkin seeds πŸŽƒ
Avocado slices πŸ₯‘
Pea shoots 🌱

For the Alfredo:
SautΓ© chopped garlic πŸ§„ with vegan butter 🌱🧈 until the garlic is soft. Add vegan milk 🌱πŸ₯›, vegan Parmesan cheese πŸŒ±πŸ§€ (I prefer @doublebatcheese - made from high quality ingredients!), vegan Mozzarella πŸŒ±πŸ§€ (@doublebatcheese again!), a touch of Himalayan Pink Salt πŸ”οΈπŸ’•πŸ§‚, black pepper 🌢️ πŸ–€, and an avocado, chopped πŸ₯‘ and the juice of half a lemon πŸ‹. Simmer and whisk until smooth.
